Pineapple

1) Grilled Pineapple with Lime Sauce

Preparation:
Peel the pineapple, remove the core, and cut it vertically into eight wedges. Then cut each wedge horizontally in half.

In a large bowl, mix the brown sugar, honey, and lime juice. Add the pineapple and toss until coated. Let it rest in the refrigerator for one hour.

In a small bowl, beat the cream cheese until smooth. Add the yogurt, honey, brown sugar, lime juice, and zest. Cover and refrigerate until ready to serve.

Heat the grill or griddle with a little oil and grill the pineapple slices on each side until golden brown. Serve with the lime sauce.

2) Tropical Seafood Skewers with Coconut and Pineapple

Preparation:
In a large bowl, mix the prawns, the peeled and roughly chopped fish, and the coconut milk. Season with salt and pepper.

Thread the prawns, fish pieces, and pineapple chunks onto wooden or metal skewers, alternating the ingredients.

Place the desiccated coconut on a plate and coat each skewer by pressing them gently into the coconut so it sticks.

Brush each skewer lightly with olive oil and cook on a barbecue or in a hot pan for 3–4 minutes on each side, until the prawns turn pink and the fish is fully cooked.

Serve with lime wedges.
